If I switch data to the eSIM in Croatia, does WhatsApp still work on my normal number?

Yes! The eSIM only carries data. Your normal SIM stays active, so WhatsApp, iMessage, calls and texts all keep working on your usual number while you use the eSIM for data in Croatia. Nothing to re-register.
