If I switch data to the eSIM in Colombia, does WhatsApp still work on my normal number?

Yes! The eSIM only carries data. Your normal SIM stays active, so WhatsApp, iMessage, calls and texts all keep working on your usual number while you use the eSIM for data in Colombia. Nothing to re-register.
