If I switch data to the eSIM in South Korea, does WhatsApp still work on my normal number?

Yes! The eSIM only carries data. Your normal SIM stays active, so WhatsApp, iMessage, calls and texts all keep working on your usual number while you use the eSIM for data in South Korea. Nothing to re-register.
